Tales of the Dinner Belle

By Brenda Stanley

Cool, creamy and easy to make, my four layered dessert is a delight. It has a delicious shortbread crust, a smooth and tangy center, and a light and chocolatey filling. It looks and tastes like you’ve hired a pastry chef to put it together, but it’s actually very simple to make. I love chocolate, so that is the flavor I use, but this recipe is versatile, so you could try banana, lemon, or even pistachio for a delicious change. You’re sure to delight your family or friends with this sweet treat.

In a large bowl, combine the flour, nuts, and butter. Press this mixture evenly into a 13×9-inch pan. Bake in a 350 degree oven for 10-15 minutes. Cool completely. While the crust is cooling, combine the cream cheese, powdered sugar and 1 cup of the whipped topping. Spread the cream cheese mixture evenly over top of the crust. In a large bowl, whisk together the pudding and milk until it thickens, pour on creamy layer. Chill until set. Spread with the remaining whipped topping and chocolate shavings or a few chopped nuts.
