• 4-6 chicken thighs (you can use skinless, boneless- but I don’t)

I don’t use a lot of appliances when I cook, most of the time any new gadget I buy ends up in my pantry gathering dust.  Most of my dishes are done in the oven or on the stove top, but my recipe for chicken using my air-fryer is really delicious.  I use crushed pork rinds in the coating, giving it a crunchy and salty flavor that is so good.  The chicken turns out tender and juicy and there is no oil used in the cooking, except a small amount of cooking spray.  You could use your fry pan and oil to create this dish, but why would you? The air fryer really does give the chicken the flavor and crunch of fried chicken.  So much so, I’ve elevated that little appliance out of the pantry and into the kitchen.

Belle’s Air-Fried Chicken

4-6 chicken thighs (you can use skinless, boneless- but I don’t)

1 egg, beaten

½ cup finely crushed pork rinds

½ cup bread crumbs

½ teaspoon garlic salt

½ teaspoon paprika

Mix together the pork rinds, bread crumbs, garlic salt and paprika. In a shallow bowl, place the beaten egg.  In another shallow bowl or plate, place the crumb mixture.  Dip each chicken thigh in the egg and then dredge in the crumbs to coat all sides.  Place the chicken in the air fryer basket that has been sprayed with cooking spray.  When all the pieces are in the basket, spray lightly with the cooking spray.  Cook in the air fryer for 25-30 minutes at 350 degrees. You could also use your oven but I would put the chicken on a rack in a rimmed baking sheet.
