When I make side dishes, I usually go for salad, vegetables, or starches such as rice or potatoes, but one of my favorite sides is my apple cabbage slaw. It is so fresh and flavorful and can be put together in just minutes. The apples are something that make this slaw really special. They add just the right amount of sweetness to compliment the cabbage. I like to use Napa cabbage because it is lighter in texture and has a more mellow taste. However, you can use regular green cabbage or even a combination. The vinegar and Dijon mustard gives this dish a tangy taste, a bit of spice, and the red pepper flakes can be adjusted to give just the right amount of heat. So if you’re thinking all coleslaw is cool, think again. This slaw is full of sweet, tangy flavor, but with a twist of heat that makes it extra special. It is the perfect complement to steaks, chops, or chicken. And even though it sounds like a summer weather dish, these ingredients are available all year long, so enjoy it whenever you need a tasty and easy to make side dish.
Belle’s Apple Cabbage Slaw
½ head Napa cabbage, shredded
1 large Granny Smith apple, cored and chopped
¼ cup chopped green onions
½ cup apple cider vinegar
½ cup sugar
¼ cup olive oil
1 tablespoon Dijon mustard
¼ teaspoon chili pepper flakes
In a large bowl, toss together the cabbage, apple and green onions. In a small bowl, mix together the remaining ingredients. Toss with the cabbage mixture. Cover with plastic wrap and chill for about an hour.
