Breakfast is one meal that often gets overlooked. I know so many people who skip it and I just don’t understand how they can do that. For me it isn’t just the need to get my body going in the morning, but also the fact that I love breakfast foods. One of my favorites is my baked oatmeal. It is hearty and filling and so delicious, with just the right amount of sweetness. The eggs give it a light and puffy texture, and because you make it the night before, in the morning you simply put it in the oven and let it bake while you’re getting ready for the day. This is not your typical oatmeal, in fact it is so tasty that you won’t look at cereal the same way again. This is one meal that will keep you full and satisfied, and put a smile on your face all day long.
Belle’s Baked Oatmeal
½ cup oil
1 cup milk
2 eggs
1 teaspoon salt
½ cup sugar
½ cup brown sugar
2 teaspoons baking powder
1 teaspoon cinnamon
½ teaspoon nutmeg
2 ½ cups oats (regular not instant or quick)
In a bowl, beat together the oil, milk and eggs. In another bowl, mix together remaining ingredients (except raisins and nuts). Add the egg mixture to the dry mixture and mix well. Pour into an 8 by 8 baking dish that has been sprayed with cooking spray. Cover and chill overnight. In the morning, uncover and bake in a 350 degree oven for 35 minutes. Serve with milk, raisins, and nuts if desired.
