Tales of the Dinner Belle

By Brenda Stanley

Baking can be intimidating, but don’t let it keep you from creating tasty treats for your family a friends this time of year.  My banana cream cheese bread is simple to make and combines the warm traditional flavors of banana bread with the creamy sweetness of cream cheese. It’s perfect for when guests come to visit or wrapped up as a gift for neighbors and friends. Nothing says you care more than a homemade treat and nothing is sweeter than a delicious baked goodie!

Belle’s Banana Cream Cheese Bread

3⁄4 cup butter, softened

8 ounces cream cheese, softened

2 cups sugar

2 large eggs

4 ripe bananas, mashed

1⁄2 teaspoon vanilla

3 cups all-purpose flour

1⁄2 teaspoon baking powder

1⁄2 teaspoon baking soda

1⁄2 teaspoon salt

1 cup chopped pecans, optional

In a large bowl or stand up mixer, beat butter and cream cheese until light. Add the sugar and beat well. Add the eggs, one at a time, and beat well after each. Mix in the mashed bananas and vanilla. In another bowl, mix together the flour, baking powder, soda and salt. Stir this into the banana mixture. Spread the batter into 2 well-greased 8- x 4-inch loaf pans.  Bake at 350° for 1 hour or until toothpick comes out clean. Cool before slicing.
