The holidays for me are a time for pie. I love the traditional favorites like pecan, pumpkin, and apple, but one of my favorites is a dessert that is good any time of the year. My banana cream pie is so creamy and smooth and it has a special ingredient that makes it even better- Vanilla ice cream. This pie is so easy to put together, which is a good thing because I usually have to make more than one. It’s so delicious it may soon become a regular at your traditional holiday table.

Belle’s Banana Cream Pie

1 (9 inch) pastry crust, baked and cooled

2 cups vanilla ice cream (very soft)

1 (3.4 ounce) box instant banana pudding

1 cup milk

2 ripe bananas, sliced

1 cup whipped topping

In a large bowl, mix together the ice cream, pudding mix, and milk until smooth. Place the sliced bananas evenly over the bottom of the baked pie shell. Pour the pudding mixture over top and smooth.  Top with the whipped topping. Chill for at least 2 hours before serving. Garnish each piece with several slices of banana if desired.
