• 1 (3 lb.) boneless beef chuck roast
  • 1 (16 oz.) bottle barbecue sauce
  • 1 onion, sliced (optional)

When you come home from work after a long day, one of the most frustrating things is to stand in front of the open refrigerator and see absolutely nothing that could be quickly made into dinner.  It is at this moment that I go to the pantry and stand there with the same result.  To which I return to the fridge and start the process over, hoping that something will spring forth and immediately start cooking itself.  What can make this even worse is if you have kids who come into the kitchen and ask, “When’s dinner?”

Prevention is the key, and I don’t mean preventing having kids, even though you may be thinking that at the moment, but instead preventing the “What’s for dinner?” question, by doing a few simple steps in the morning, that will have you beating a path home after work.

Imagine walking through the door of your home to the savory and rich aroma of simmering barbecue beef.  Here is a recipe I’ve used for years and it can’t get much easier.

Place the roast in the slow cooker.  Pour the barbecue sauce on top and turn the roast to coat.  Spread the onion on top.  Cook on low for 8-10 hours.  Shred the beef with two forks and mix with the sauce.  Serve on toasted buns.
