There is no better time of the year to indulge in salad than when it starts to turn warm outside.  Which is also the best time of year for a barbecue.  The grill is calling you and you need a quick and flavorful side dish to accompany a steak, chop or chicken. Baked beans are great, but something cool and crisp makes the meal complete. My barbeque salad isn’t made on the grill but is the perfect salad for to go with anything you make on it. In other words, it is the salad even your most diehard carnivores will crave.  It is so simple and can be made in minutes.  You can even make the salad in advance and then add the dressing right before serving. The combination of crisp lettuce, grapes tomatoes, crunchy bacon and sunflower seeds, all covered in a creamy smoky dressing, will make you want to stoke up the fire and welcome the summer grilling season in style.

Belle’s Barbeque Salad

½ cup bottled ranch salad dressing

¼ cup barbeque sauce

4 cups lettuce (I like Romaine or Butter lettuce)

1 ½ cups halved grape tomatoes

¼ cup bacon bits

¼ cup sunflower seeds

In a small bowl, mix the ranch dressing and the barbeque sauce until smooth.  In a large bowl, toss the lettuce, tomatoes, bacon bits and sunflower seeds.  Right before serving, add the dressing and toss to coat.
