I’ve found a great way to use leftover chicken. My barbecue chicken bacon pizza is easy to put together and is so delicious. The flavor is so much fresher and more flavorful than freezer pizza and I love the different ingredients that make this pizza unique. Gorgonzola cheese gives it a tangy taste and I love adding bacon for some smoky flavor.  I use the roll out pizza dough in the refrigerated section of the grocery story because it bakes up crispy and chewy, but you can use any crust you’d like.  And this is one dish the kids can help with. Once you’ve fried up the bacon, mushroom, and onions, let them do the topping and I guarantee they will enjoy this homemade pizza much more than anything thing that arrives in a box.

Belle’s BBQ Chicken Bacon Pizza

1 tube refrigerated pizza dough

4 slices bacon

1 ½ cups chopped, cooked chicken

½ cup barbecue sauce

½ large onion, sliced thin

1 cup sliced mushrooms

¾ cup shredded mozzarella cheese

¼ cup crumbled Gorgonzola cheese

2 tablespoons sliced green onions

On a greased baking sheet, unroll the pizza dough.  Spread the barbecue sauce evenly over the dough. In a large fry pan, cook the bacon until crisp. Remove and drain on paper towels and then crumble.  In the remaining bacon grease, cook the onion and mushrooms until tender.  Spread the onions and mushrooms over the sauce and then spread the chicken over the top of that. Sprinkle with the cheeses and then the green onions.  Bake at 400 degrees for about 10- 15 minutes or until the crust is golden brown and the cheese is melted.
