As I sit here looking out at a blanket of white, I long for spring, but also for a big bowl of soup.  There is nothing better on a cold winter day.  My broccoli bacon cheese soup is rich and tasty with tiny bits of bacon and lots of cheesy flavor.  It’s easy to make and since this recipe can be easily doubled, it also stores well and is even better the next day. If you want to use the broccoli stems, just peel them first and then there isn’t as much waste.  Either way, this soup is one that is so warm and filling, you won’t notice the chill.

Belle’s Broccoli Bacon Cheese Soup

3 strips bacon

6 tablespoons

1 sweet yellow onion, diced

1 teaspoon minced garlic
1/4 cup all-purpose flour
2 cups chicken broth
2 cups half-and-half
3 cups broccoli florets, chopped
2 large carrots, trimmed, peeled, and sliced thin
3/4 teaspoon salt
3/4 teaspoon pepper
1/2 teaspoon smoked paprika
1/2 teaspoon dry mustard
1 cup sharp cheddar cheese, grated

 

Fry the bacon until crisp and then remove and drain on paper towels. In the same fry pan, cook the onion and garlic until tender.  Add the broccoli and carrots and cook until lightly browned.  Add the broth and cover and cook for about 10 minutes or until very tender.  Using a potato masher, mash the veggies until almost smooth. In a separate pan melt the butter, slowly add the flour and whisk until it becomes smooth and thick.  Slowly add the half and half until the sauce is thick and bubbly. Add the cheese and cook until it is melted. Stir in the spices. Add the cheese sauce to the broccoli and carrots and mix well.  Add the bacon and stir until heated through.
