Some days I just need something sweet. My husband needs sweets every day, so I keep a number of ingredients always handy to keep him in cookies. I have used boxed cake mix as the base for cookies for years now. It has eliminated having to use measuring cups and spoons, not to mention how much time it saves me. The other night I decided to try something new and I am so glad I did. I looked through the pantry and found caramel bits that I normally use for melting and coating and decided to use them in a cookie. My candy bar cookies are chocolatey and chewy like a candy bar, but with the sweet cakey goodness of a cookie. You only need four ingredients and in about 15 minutes you will have a sweet treat that your family will beg you to make over and over again.
Belle’s Candy Bar Cookies
1 (15.25 ounce) box milk chocolate cake mix
2 eggs
¼ cup oil
¾ cup caramel bits
In a large mixing bowl, combine the dry cake mix, eggs, and oil. Fold in the caramel bits. Using a cookie scoop, place cookies on an ungreased baking sheet about 2 inches apart. Bake at 350 for 10 minutes. Cool on wire racks.
