Here’s a fresh and easy salad or side dish that is perfect for these warm summer evenings. My carrot and raisin salad is sweet and tangy and it ready in minutes. Carrots are close to the perfect vegetable. They are full of health benefits and are sweet and delicious. They are a root so they are more of a fall or winter crop, but they are able to stay in your fridge for weeks, making them a great go-to ingredient any time of the year. Raisins are also usually in the pantry, so when you are looking for something to compliment a barbeque, any type of meat, or even a casserole, this salad goes with just about anything. I remember my grandmother and mother making this dish, and every time I make it I wonder why I don’t more often. It may be simple, but it is so good.
Belle’s Carrot and Raisin Salad
4 cups shredded carrots
1 cup raisins
1/4 cup mayonnaise
2 tablespoons sugar
2 to 3 tablespoons milk
In a large bowl, stir together the carrots and raisins. In a separate bowl whisk the mayonnaise, sugar, and just enough milk to make it the consistency you want. Pour the dressing over the carrots and raisin and toss well to coat. Let the salad sit in the fridge for about an hour so the flavors can mix.
