I’m a cheese fiend. I love it melted, sliced, sprinkled, shredded and I add it to everything from salads, to casseroles, to sauces. One of my favorite cheesy treats in my cheesy bread sticks. They aren’t a bread stick, but they also aren’t just straight cheese- but they are pretty close to it. They bake up soft and melty and if you are doing the low carb thing, these are perfect. I love to serve these as a side with dinner instead of rolls or bread, but you can also use this cheese dough for an extra tasty pizza crust. They can be put together in just minutes, which along with my cheese obsession may be why I make them so often.
Belle’s Cheesy Bread Sticks
1 ½ cups shredded mozzarella cheese
2 tablespoons cream cheese
¾ cups flour (almond or coconut flour if you’re low carb)
1 teaspoon apple cider vinegar
1 egg
½ teaspoon salt
Extra virgin olive oil
Garlic salt
Place the mozzarella cheese and the cream cheese in a microwave safe bowl and place in the microwave for about 1 minute. Mix them together well. Add the vinegar, egg, flour and salt and mix into a dough. Place the dough on a baking sheet lined with parchment paper. Place another piece of parchment on top and press or roll dough into a circle about ½ inch thick. Remove the top parchment paper. Bake in a 400 degree oven for 10 minutes. Remove and brush with the oil and sprinkle with garlic salt. Bake another 2 minutes. Remove and cut with a pizza wheel into strips.
