I’m not sure what it is about casseroles, but they are just so homey and satisfying. My cheesy cabbage casserole is easy to put together and the flavors mix together making it one of my favorite one dish meals. Just enough spice to give the mellow flavors of the cabbage and cheese a little kick. Serve this with a simple salad and you have a meal that is complete and delicious. You can also mix this up beforehand and then pop it in the oven when everyone is getting home and ready for a hearty meal.
Belle’s Cheesy Cabbage Casserole
½ head of cabbage, shredded
¼ cup butter
1 pound ground beef
1 teaspoon salt
1 teaspoon onion powder
¼ teaspoon pepper
1 tablespoon chili powder
1 teaspoon cayenne pepper
1 tablespoon apple cider vinegar
2 cups shredded cheddar cheese
Fry the cabbage in the butter in a large frying pan until soft. Add the salt, onion powder, pepper, chili powder, cayenne and vinegar. Stir and continue to fry for a couple of minutes. Set aside on a plate.
In the same pan, brown the ground beef. Lower the heat to medium-low. Add the cooked cabbage and saute together with the beef. Remove from heat and stir 1 cup of the cheese. Place into a buttered 9 by 13 inch baking dish. Sprinkle the rest of the cheese on top and bake at 400 degrees for 20 minutes or until the cheese melts and begins to brown.
