• 8 cups broccoli florets

My usual Easter of cooking for a crowd, didn’t happen this year. Everyone seemed to have other plans, but I didn’t want to miss out on my Easter brunch favorites, including ham. I rarely have it any other time of the year and I really look forward to it. So I baked one up just for me and my hubby. Needless to say, I have a lot of leftover ham. So instead of placing in bags and freezing it- and forgetting about it until next Easter- I make my cheesy ham and broccoli casserole and enjoy it once again. This recipe is super creamy and delicious and so simple to make. Be aware this makes eight servings, so you could invite your Easter guests back the next day for leftovers.
Belle’s Cheesy Ham and Broccoli Casserole
8 cups broccoli florets
3 tablespoons extra virgin olive oil
½ teaspoon salt
½ teaspoon pepper
4 cups fully cooked ham, cubed
½ cup heavy cream
1/2 cup chicken broth
2 cups sharp cheddar cheese, shredded, divided
1 cup mozzarella cheese, shredded
4 tablespoons cream cheese
2 teaspoon minced garlic
Layer broccoli in a large casserole dish sprayed with cooking spray. Drizzle with olive oil and sprinkle with the salt and pepper. Bake at 400 degrees for 15-20 minutes. While the broccoli is cooking, Mix together the heavy cream, chicken broth, ½ cup of the cheddar cheese, mozzarella cheese, cream cheese and garlic in a medium sauce pan over medium-low heat. Stir frequently. When the broccoli is done, top with cubed ham and then pour cheese sauce over top and mix everything together. Sprinkle remaining 1 cup of cheddar cheese over top. Bake for an additional 15 minutes.
