Eating healthy doesn’t mean being hungry or having to eat foods without flavor. My chicken lo Mein is an easy and tasty recipe that can be put together quickly. Lo Mein means “stirred noodles” in Cantonese, but there is much more to this dish. It also has lots of healthy ingredients, including fresh vegetables and protein packed chicken. The sauce is full of flavor and with everything simmering in it, you will have a dish the whole family will enjoy. And what could be better than an entire meal in one pan? Life is busy, and this dish is easy to make and even easier to clean up.

Belle’s Chicken Lo Mein

12 ounces Lo Mein noodles or spaghetti

1 tablespoon sesame oil

1 pound boneless, skinless, chicken thighs, cut into 1 inch pieces

Salt and Pepper

1 teaspoon minced garlic

2 teaspoons fresh grated ginger

1 large carrot, grated

1/2 head small cabbage, shredded

1/4 cup chicken broth

1/4 cup soy sauce

2 tablespoons oyster sauce

2 tablespoons thinly sliced green onions

1 tablespoon sesame seeds

In a large pot of boiling, salted water, cook the noodles for about 8 minutes or until almost soft. While the noodles are boiling, make the sauce. In a medium bowl, whisk together the broth, soy sauce, and oyster sauce and set aside. When noodles are done, drain and set aside. In a large skillet over medium-high heat, heat the oil. Add the chicken, season with salt and pepper, and cook until golden and crispy, 7 to 8 minutes. Move the chicken to one side of skillet, and to other side, add garlic, ginger, carrot, and cabbage and cook until tender. Pour the sauce over the chicken and vegetables and stir. Add cooked noodles, tossing to combine. Simmer until noodles are soft and everything is heated through. Garnish with green onions and sesame seeds before serving.
