We’ve had a lot of strange weather this year, and I’m sure you’re like me and hope to see the sun and enjoy summer weather. During this season, I like to get out of the kitchen as much as possible. If you haven’t discovered the convenience of rotisserie chicken from the grocery story, you are really missing out. Not only is it a great way to serve a quick meal, but the leftovers are perfect in other recipes such as my Chicken Salad. It makes a great lunch the next day. The chicken is already seasoned and fully cooked, so all you have to do is chop it up and add the other simple ingredients. I add a sprinkle of celery salt to give it extra flavor and then serve it in bread like a sandwich or over lettuce leaves for a salad. Either way, the textures and flavors are delicious and perfect for what we hope are warm sunny days ahead.
Belle’s Chicken Salad
2 cups cooked chicken, chopped
1 cup celery, chopped
½ cup onion, chopped
¾ cup mayonnaise
2 tablespoons sweet hot mustard
½ teaspoon celery salt
Mix all ingredients in a large bowl. Chill well before serving.
