Tales of the Dinner Belle

By Brenda Stanley

I think it’s a requirement that I give you a variety of chocolate choices when it comes to my recipes.  It is one of my favorite flavors, so I make chocolate treats regularly.  My chocolate cream cheese frosted brownies are one of my most rich and decadent desserts.  Not only are the brownies laced with chocolate chips, but the frosting is a creamy and delicious chocolate cream cheese that is to die for.  I don’t make these often because they are so addicting, but if you want the ultimate chocolate treat, this one is sure to please.

Belle’s Chocolate Cream Cheese Frosted Brownies

1 (15 ounce) box fudge brownie mix

3 tablespoons water

2 eggs

½ cup oil

½ cup chocolate chips

8 ounces cream cheese (very soft)

¼ cup salted butter (very soft)

1 teaspoon vanilla

½ cup unsweetened cocoa powder

4 cups powdered sugar

¼ cup heavy cream

In a large bowl, mix together the brownie mix, water, eggs, oil, and chocolate chips.  Spread in a 9 by 13 inch baking dish and bake at 350 degrees for 25 minutes.  Remove from oven and cool completely.  In a large bowl, (or use your stand mixer), beat together the cream cheese and butter until smooth.  Add the vanilla and cocoa powder and again beat until smooth.  Add the powdered sugar one cup at a time and beat after each cup.  Add the heavy cream until you get the right consistency for spreading.  Spread the frosting over the cooled brownies and cut into squares.
