It’s March, which means the weather has me wrapped up inside and often bored. This is when I find myself in the kitchen creating dishes that usually have me spending extra hours jogging on the greenbelt come summer. My chocolate cream cheese pie is one of those recipes. It is so rich and creamy with a silky chocolate flavor. It is quick and easy to put together and yet tastes like you’ve been working on it all day. I like to make my own crumb crust, but you can save a step and buy one already prepared if you’d like. So, if you’re stuck inside on a cold and blowy day, why not spend it creating a decadent and delicious dessert that will warm the spirits of everyone who is looking forward to spring.
Belle’s Chocolate Cream Cheese Pie
Crust
1/3 cup butter, melted
1 1/2 cups graham cracker crumbs
3 tablespoons sugar
Or an 8-inch prepared crumb crust
Filling
2 cups chocolate chips
1 pkg. (8 oz.) cream cheese, softened
1 teaspoon vanilla
1 cup heavy whipping cream, whipped
For the crust: In a large bowl, mix together the melted butter, crumbs, and sugar and then pat evenly into an 8 or 9- inch pie plate. Set in the fridge. For the filling: Melt the chocolate chip in a glass bowl in the microwave, stirring at one minute intervals so they don’t burn. Set them aside until they are room temperature. In a large mixing bowl, whip the cream cheese, melted chocolate chips, and vanilla until smooth. Add the whipped cream and whisk until smooth. Spread into the pie crust and chill for at least two hours before serving. Sprinkle with chopped nuts or a dollop of more whipped cream before serving if desired.
