I love having people tell me they’ve tried my recipes and enjoy them, and I also love hearing how they’ve altered them with different ingredients to make them their own. I love experimenting with different flavors and discovering new delicious treats, and my chocolate walnut zucchini cake is a perfect example of when it turns out wonderfully! This dessert is so moist and rich. The zucchini is what gives this cake its incredible moistness, and the chocolate chips melt while baking and are delicious along with the crunch of the walnuts. I use a simple boxed cake mix, which makes this recipe so quick and easy. If you’re a chocolate lover, I guarantee this will be a new favorite! Belle’s Chocolate Walnut Zucchini Cake
2 cups shredded zucchini
1 box chocolate cake mix (I like devil’s food or triple chocolate)
3 eggs
¼ cup oil
½ cup water
½ cup chopped walnuts
½ cup semi-sweet chocolate chips
In a large mixing bowl or a stand mixer, combine the zucchini, dry cake mix, eggs, oil, and water. Beat at medium speed for 2 minutes. Fold in the walnuts. Spread the batter evenly into a 9 by 13 inch cake pan that has been sprayed with cooking spray. Sprinkle chocolate chips evenly over the top and then bake at 350 for 35 minutes. Cool before serving.
