The holidays are here and so are all the wonderful treats.  The cookies, cakes, pie, candy and other sweets are what I love about this time of year.  Many of these treats are only served during this time of year, which makes them even more special.  One of my favorites is my coconut macaroons.  They are so simple, but taste so good.  The combination of sweetness and the flaky, toasted flavor of coconut make them exceptional.  These are treats that your kids can help you make because they are so simple.  Stir, drop, and bake.  Something this delicious shouldn’t be this easy, but they are.  I don’t know why I don’t make them all year round!

Belle’s Coconut Macaroons

1 (14 ounce) can sweetened condensed milk

1 (15 ounce) bag of flaked, sweetened coconut

20 dried cherries

Mix together the milk and coconut.  Using a small cookie scoop, place rounded balls on a lightly sprayed cooking sheet.  Push a dried cherry onto the top of each cookie.  Bake at 325 degrees for 12 minutes or until lightly browned.
