Summer weather calls for cool and refreshing dishes and my cold pea, chestnut, and curry salad really fits the bill. It is super easy to make and can be ready to serve in minutes. I love all the crunchy textures that are combined with a flavorful and creamy curry sauce. This dish is perfect for outdoor barbecues or potlucks and can be stored in the fridge for days. In fact, it is often better when it’s been chilled for a while to allow all the flavors to meld. Frozen peas don’t need to be thawed because they add even more crunch to this unique salad. This will be a hit at your next summer family meal.
Belle’s Cold Pea, Chestnut, and Curry Salad
2 cups frozen peas
1 (8 ounce) can water chestnuts, chopped
¼ cup real bacon bits
¼ cup smoked almonds, chopped
¼ cup green onions, chopped
2/3 cup mayonnaise
2 teaspoons red curry paste
In a medium bowl, combine the peas, chestnuts, bacon, almonds, and onions. In a small bowl, mix together the mayonnaise and curry. Add to the peas and stir to coat. Let stand for about an hour to let the peas thaw a bit.
