I love chicken wings, but I’m not a fan of super-hot wings. However, I am a huge fan of extra crispy and I’ve found the perfect way to get that. It is a secret ingredient- baking powder. This simple baking staple makes the wings crispy without adding a thick crust or floury taste.  I bake rather than fry and then add the sauce for a wonderfully crispy, saucy wing. If you like yours with more spice- use just the hot sauce. The flavoring is really up to you, but I think you’ll love the crispy undercoating so much this will be your new favorite way to wing it!

Belle’s Crispy BBQ Hot Wings

3 pounds party style chicken wings or whole chicken wings that have been halved

1 tablespoon baking powder

1 teaspoon salt

1/2 teaspoon pepper

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

¼ cup hot wing sauce

¼ cup barbecue sauce

Celery sticks and ranch dressing for serving.

Line a rimmed baking sheet with foil and place a baking rack on top of the pan and spray it with cooking spray. Place the chicken wings in a large (gallon sized) plastic zip lock bag. Add the baking powder, salt, pepper, garlic powder and onion powder. Seat and then shake to coat the chicken evenly. Place the wings on the rack in a single layer. Bake at 400 degrees for 45 minutes or until wings are light golden brown and crispy. In a small bowl, whisk together the hot sauce and barbecue sauce. Brush over the wings, turn and brush the other side. Place back in the over for another 5 minutes to glaze the sauce onto the wings. Serve with celery sticks and ranch dressing.
