The slow cooker is a savoir for busy families, and my crispy pork carnitas is a great dish that my whole family loves. Slow cookers don’t produce crispy food, but with this dish, a quick broil in the oven produces a wonderful texture that is what makes this spicy and flavorful dish so good. I usually serve this with warm flour tortillas and a variety of toppings like shredded lettuce, chopped tomatoes, and sour cream, but it has plenty of flavor as a stand-alone dish.  And the carnitas also keeps well in the fridge for several days, making it a great go-to lunch. Flavor and convenience all in one!

Belle’s Crispy Pork Carnitas

1 tablespoon olive oil

1 (4-5 pound) pork shoulder/pork butt roast

2 tablespoons lime juice

3 teaspoons minced garlic

1 medium onion, roughly chopped

1 (4-ounce) can diced green chilies

1 cup chicken broth

3 bay leaves

1 tablespoon chipotle chili powder

1 teaspoon pepper

1 teaspoon salt

1 teaspoon chili powder

2 teaspoons cumin

2 teaspoons oregano

In a large frypan, sear the pork on each side until browned. Place in the slow cooker.  Mix together the remaining ingredients and pour over the roast in the slow cooker. Cook on low for 8 hours. Remove the bay leaves. Remove the meat from the slow cooker and shred. Spread the shredded pork on a baking sheet and broil in the oven until crispy.  Remove from the oven and pour ¼ cup of the reserved juices from the slow cooker onto the crispy pork and toss. Broil an additional 5 minutes or until the meat is crispy. Pour an additional ¼ cup liquid over the crispy pork and serve immediately.
