My husband is a hunter but since I didn’t grow up with game meat, it’s been a challenge for me to find ways to cook it.  However, over the years, I’ve found a number of recipes that I actually love.  One is my cubed steaks with onion gravy.  This dish can use deer or elk cubed steaks but it is also delicious using beef.  These steaks are tender and full of flavor and the gravy is perfect to serve over the steaks as well as with potatoes or rice. It’s a hot and hearty meal that is quick and easy to make regardless of what type of meat is in your freezer.

Belle’s Cubed Steaks with Onion Gravy

1 ½ pounds cubed steak (4 steaks)

1/3 cup flour

½ teaspoon garlic salt

½ teaspoon black pepper

½ cup oil

1 yellow onion, chopped

1 cup beef broth

1 package dry onion soup mix

In a shallow dish, mix together the flour, garlic salt, and black pepper. Heat the oil in a large frypan over medium high heat and then dredge both sides of the steaks in the flour mixture and place them in the hot oil, being careful that they have plenty of room.  You may have to cook these in two batches. Cook for four minutes and then turn and cook another four minutes. Remove the steaks from the pan and cover to keep warm. To the drippings in the pan, add the onions and cook until tender.  Add a tablespoon of flour from the dredging mixture to the pan and stir until smooth, then add the broth and dry soup mix. Stir until thick and bubbling.  Serve over the steaks.
