Who doesn’t love a lunch of grilled cheese and tomato soup? When you think of comfort foods, this meal has it all. But before you pull out that can opener, try this delicious and creamy tomato soup that is super easy to make, but with a rich homemade flavor. I use a jar of spaghetti sauce as the base. I don’t usually endorse brands, but I’ve found one I love that is perfect for this recipe. It is Uncle Steve’s Tomato Basil Sauce. I guess Uncle Steve was an actor on the Soprano’s. I never watched the show, but the sauce is a winner. I love the flavor of basil in my tomato soup! I then add broth, some milk, and a blender. It’s that simple, but the taste is so much better than out of a can. Serve it up piping hot and all you need are the sandwiches!
Belle’s Easy Creamy Tomato Soup
1 (25 ounce) jar spaghetti or marinara sauce (I use Uncle Steve’s Tomato Basil Sauce)
1 cup chicken broth
4 tablespoons milk or cream
In a blender, place all ingredients. Blend well until smooth. Pour into a saucepan and heat until piping hot. Serve with basil leaves or heavy cream for a garnish.
