There are times, I just need chocolate. I don’t need an entire chocolate cake or box of candy, but just a decadent bite or two to satisfy my love for the flavor. My fudgy brownie bites are perfect for this. They are small but packed with delicious chocolate and with the addition of the hazelnut spread, these little bites are so fudgy and delicious, I often make a double recipe and freeze little batches for when I need my fix. I add a dab of the hazelnut spread as frosting, (because who are we fooling? That is basically what it is!), and they are hard to resist. Make sure you don’t overcook them. These brownies are fudgy in the center and cakey on the sides, so you want them just slightly underdone!
Belle’s Fudgy Brownie Bites
1 cup hazelnut spread (Nutella) at room temperature
2 eggs
¼ cup unsweetened cocoa powder
1/3 cup flour
¼ teaspoon salt
More hazelnut spread for frosting
In a bowl mix together the hazelnut spread and eggs until well combined. Add the cocoa, flour and salt and mix well. Spray a mini muffin pan with cooking spray. With a spoon, fill each muffin tin a little more than half full. Bake for about 12 minutes. Until the edges and sides are set, but the center is still not set. A toothpick should come out clean around the sides, but the middle will be wet. As they cool this will make them fudgy in the middle. Cool on wire racks completely before frosting.
