Fresh vegetables from the garden are such a wonderful thing this time of year. I love going out to the yard and “picking” dinner. Green beans are one of my favorites and like many vegetables they are so much better when they are fresh. My garlic basil green beans combines the delicious crunch of the beans with garlic and the fresh flavor of basil. It’s an easy and quick dish to put together and while it’s a lot tastier than simply steaming the beans, it also doesn’t completely overpower them either. It’s a great side dish for just about anything and can even be made with frozen green beans when we’re in the middle of winter and longing for those warm summer days.
Belle’s Garlic Basil Green Beans
1 ½ pounds fresh green beans, washed and trimmed
2 tablespoons extra virgin olive oil
½ cup chopped fresh basil
2 teaspoons minced garlic
½ cup chicken broth
In a large fry pan heat the oil over medium high heat. Add the green beans and the garlic and cook just until the garlic is fragrant and the beans start to blister (about 2 minutes). Add the chopped basil and stir to mix. Add the chicken broth and cook until the liquid absorbs and the bean are crisp tender (about 5 minutes).
You can use frozen green beans, by substituting them for the fresh and thawing them a bit before use.
