I can never have enough chicken recipes. I love how versatile chicken is and I usually always use chicken thighs instead of breasts, because the flavor is better and they almost never dry out, so it’s hard to ruin a recipe when you use them. My garlic sesame chicken is simple and quick to make, but it is also so full of flavor. The marinating process is what makes this dish so tasty, and you can mix this up before you head to work or make it when you get home. I find even a quick marinade seems to do the trick. With a salad and some crusty bread, this is an easy dinner that is so delicious, you’ll be wondering why you didn’t invite guests.

 

Belle’s Garlic Sesame Chicken

1 tablespoon soy sauce

1 tablespoon sesame oil

3 teaspoons minced garlic

1 teaspoon salt

1 teaspoon black pepper

¼ cup sliced green onions

¼ cup chopped Italian parsley

8 chicken thighs (boneless and skinless)

2 tablespoons olive oil

 

In a shallow bowl, combine the all the ingredients except the chicken and olive oil. Mix until smooth.  Add the chicken and toss to coat.  Cover the bowl with plastic wrap and chill for at least thirty minutes (up to eight hours).  Heat the olive oil in a large fry pan over medium heat.  Remove chicken from marinade and place in the hot pan. Sear the chicken on all sides for about 5 minutes to brown, then reduce heat to low, cover, and cook for another 15 minutes, turning every five minutes just until chicken is no longer pink inside.
