• ¾ cup buttermilk

Salad is a dish that says summer is here. I also feel that way about firing up the grill. And that is where you can find one of my favorite dishes. My grilled salad has such a wonderful unexpected flavor that is perfect for a summer time meal. The hearty romaine lettuce stays crisp but the grilling gives it just the right smoky flavor. This combined with the fresh and creamy dressing is perfect thing to serve with your barbeque. After you try this, you’ll be grilling all year round.
Belle’s Grilled Salad
¾ cup buttermilk
½ cup mayonnaise
2 tablespoons chopped fresh chives
1 tablespoon minced green onion
1 garlic clove, minced
½ teaspoon salt
¼ teaspoon freshly ground pepper
1 large head Romaine lettuce
2 teaspoons extra virgin olive oil
½ cups grape tomatoes, sliced
In a bowl, whisk together the buttermilk, mayonnaise, chives, green onion, garlic, salt and pepper. Chill until ready to use. Slice the head of lettuce in half lengthwise. Brush the cut sides with the oil. On a hot grill, place the lettuce cut side down and grill until the lettuce has grill marks and is slightly wilted (about 4 minutes). Serve with the dressing and some fresh grape tomatoes.
