I love making Easter brunch. All the foods that are both breakfast and lunch, with an emphasis on eggs, which are a favorite of mine. One of my easiest egg dishes is my ham, egg, and cheese cups. These are the perfect thing to serve at a family gathering, because they are so simple to put together and when they are done baking, each serving is in its own little nest. Three delicious brunch flavors all in one. And the serving and presentation is both simple and appealing. With Easter just a few days away, this dish has it all.
Belle’s Ham, Egg, and Cheese Cups
4 thin slices ham
4 large eggs
¼ cup shredded cheddar cheese
Spray 4 muffin tins with cooking spray. Place a slice of ham into each cup. Crack an egg into the ham lined cups. Bake at 400 degrees for 13 minutes. Sprinkle a little cheese onto each cup and bake for about a minute longer. Scoop out each egg filled cup for individual servings.
