During the holiday rush, it is often difficult to find time to fix a meal, let alone a dinner that is special enough for guests, but my honey soy pork roast is not only succulent and delicious it is so simple to make. I love the flavors of this dish so much, I’ll often make a double recipe and save one roast for use in other dishes like tacos, hash, or pot pies. The slow cooker makes the meat so tender and the honey soy glaze is perfect for serving over rice or potatoes. You can even put this all together the night before and then let it marinate in the fridge. In the morning, place it in the slow cooker and by the time you’re ready for dinner, you have a meal that is guest worthy!

Belle’s Honey Soy Pork Roast

1/4 cup olive oil

1 cup chicken stock or broth

½ cup soy sauce

¾ cup honey

½ teaspoon salt

¼ teaspoon pepper

2 cloves minced garlic

2 tablespoons fresh ground ginger

A pinch of red pepper flakes (optional)

2 1/2 – 3 pounds of pork tenderloin

Spray slow cooker insert with nonstick cooking spray.

In a small bowl, mix together the olive oil, chicken broth, soy sauce, honey, salt, pepper, garlic, ginger, and red pepper flakes. In a frypan, sear the pork roasts on all sides in a small amount of oil just until browned. Place the meat in the slow cooker and then pour the marinade on top. Cover the slow cooker and set on low for 8 hours.
