Its asparagus season and even if you don’t hike the canal banks and pick it yourself, my lemon parmesan asparagus is a great reason to get some. It is an easy dish to make and a great side dish when the weather is good and you want to grill some steaks or chicken. The combination of tart lemon and parmesan really goes well with this tasty and unique vegetable. Take advantage of the season and enjoy a delicious side dish that tastes like summer.
Belle’s Lemon Parmesan Asparagus
2 tablespoons olive oil
2 teaspoons minced garlic
1 pound asparagus, trimmed
½ teaspoon salt
¼ teaspoon pepper
2 tablespoon lemon juice
2 tablespoons freshly grated Parmesan
In a large fry pan, heat the oil over medium high. Add the garlic and cook just until fragrant (about a minute). Add the asparagus and cook, rolling them to brown slightly and become tender. Sprinkle with the salt and pepper. When fork tender, add the lemon juice and cheese and toss to coat. Cook another minute or until cheese melts.
