I love bread, especially hot out of the oven. I also love to make bread. There is something so homey and simple about it. I feel the process itself is relaxing and comforting. The problem with bread is the carbs and calories, but I’ve found something that can substitute when you want bread but are trying to avoid the carbs. My light as a cloud bread is a unique treat that is satisfying and tasty, but will save you the guilt of having regular bread. This recipe is super simple and in just 30 minutes you will have a delicious and doughy treat. It is a similar taste and texture to a pop over, which may be another reason I love this recipe. You don’t need to add any jam or honey, but you can. I’ve even used cloud bread to make peanut butter and jam sandwiches. Regardless of how you eat it, cloud bread is simply heaven.
Belle’s “Light as a Cloud” Bread
3 large eggs, separated
1/4 teaspoon cream of tartar
2 ounces cream cheese, very soft
1 tablespoon sugar
Preheat the oven to 350 degrees. Line a baking sheet with parchment paper. Beat egg whites and cream of tartar together in a bowl until stiff peaks form. In a separate bowl, with an electric hand mixer, beat the egg yolks, cream cheese, and sugar until very smooth. Gently fold the egg whites into the cream cheese mixture. Using a ½ cup measuring cup, carefully scoop the mixture, making 6 “buns” onto the prepared baking sheet. Bake about 30 minutes or until the bread is lightly browned.
