• 4 large red potatoes, scrubbed and cut into quarters

I call so many of my dishes “comfort foods”, that I’ve realized most of my cooking revolves around recipes that make you feel warm and homey. My loaded mashed potatoes are exactly that type of recipe. Mashed potatoes are a staple here in Idaho, as are baked potatoes loaded with all the toppings. I love to combine the two into a tasty and satisfying side dish that is easy to put together. When you cook the potatoes, leave the skins on. They contain a lot of the nutrients, plus they add both color and texture to the dish. Paired with steak, roast, or chops, this is the perfect side that will satisfy the entire family.
Belle’s Loaded Mashed Potatoes
4 large red potatoes, scrubbed and cut into quarters
¼ cup real bacon bits
¼ cup chopped green onions
2 tablespoons butter
½ teaspoon salt
½ teaspoon pepper
½ cup sour cream
½ cup shredded cheddar cheese
In a large pot of boiling, salted water, cook the potatoes for about 6 minutes or until fork tender. Drain, but reserve about ½ a cup of the water. Mash the potatoes with the butter. Stir in the other ingredients. Add some of the cooking water for consistency.
