I love making cookies. There is something calming about the process and the smell that drifts throughout the house that is heavenly. One of my husband’s favorites is my oatmeal chocolate chip. I’ve tried so many different recipes to try and get this right and after dozens of attempts, I think these are it! They are chewy with crispy edges and loaded with sweet chocolate chips. I add just a little cinnamon and allspice to give them some traditional oatmeal cookie flavor. They just might be the perfect oatmeal chocolate chip cookie. This recipe makes a lot, but these cookies freeze well, so place them in airtight bag and then you’ll have them available anytime you need a sweet treat!
Belle’s Oatmeal Chocolate Chip Cookies
1 cup butter, softened
1 cup brown sugar
½ cup sugar
2 eggs
2 teaspoons vanilla extract
1 ¼ cups all-purpose flour
½ teaspoon baking soda
1 teaspoon salt
½ teaspoon cinnamon
¼ teaspoon allspice
3 cups quick-cooking oats
1 ½ cup semisweet chocolate chips
In a large mixing bowl, cream together the butter and sugars until light. Add the eggs one at a time, and the vanilla and blend well after each. In a separate bowl, mix together the flour, salt, and spices and then mix into the butter mixture. Stir in the oats and then the chocolate chips and blend well. Using a cookie scoop or teaspoon, drop by rounded scoops onto an ungreased cookie sheet about two inches apart. Bake at 350 degrees for 12 minutes. Cool on wire racks.
