Dave and I have been empty nesters for years and yet I still find myself cooking like I’m feeding a crowd. We often live on leftovers. And when I have leftover rice, I love to make my Parmesan bacon rice. It’s full of so many of my favorite flavors like Parmesan cheese, peas, and who doesn’t love bacon? The lemon adds a just the right amount of tanginess. This recipe goes perfectly with most main dishes and is one the whole family enjoys. It’s a dish that makes leftovers something you’ll actually look forward to.

Belle’s Parmesan Bacon Rice

2 cups cooked rice

6 strips bacon

1 tablespoon butter

½ cup fresh grated Parmesan cheese

1 cup frozen peas

½ cup sliced green onions

1 tablespoon lemon juice

½ teaspoon salt

½ teaspoon pepper

In a large skillet cook the bacon until crisp. Remove from pan and drain on paper towels and crumble. Pour out all but 2 tablespoons of the grease. Add the butter and cook until melted. To the pan add the cooked rice, and heat through.  Add the cheese, peas, green onions, lemon juice, crumbled bacon, salt and pepper and stir to combine.
