I have written a lot about my love (obsession) with pasta. It is the ultimate comfort food and I could eat it all the time, and usually do. One of my favorite pasta dishes is also one of my easiest. It is a quick and simple pasta and shrimp Alfredo. It is rich, creamy and very satisfying. This recipe literally takes five ingredients and is ready in less than 20 minutes. It is also a versatile recipe, so you can add or change things and it will still be delicious. You can swap out the shrimp for chicken, the peas for green beans, or whatever you have available. It is also all done in one pot, so even clean-up is a breeze. What could be better? Calorie free! Well, that is not the case, but it is worth every delicious bite.
Belle’s Pasta and Shrimp Alfredo
1 pound frozen ravioli or tortellini (I like the mushroom filled)
1 (12 ounce) package frozen shrimp (small, deveined, and peeled)
1 (15 ounce) jar Alfredo sauce (I use the light version)
2 cups frozen peas
¼ cup grated parmesan cheese
Bring a large pot of water to a boil. Add the pasta, shrimp and peas. Boil for 3 minutes, then rinse and drain. Return everything to the pot. Add the Alfredo sauce and stir to coat. Let simmer about 5 minutes. Serve with a sprinkle of parmesan cheese.
