• 3/4 cup uncooked jasmine rice
  • 2 cups milk, divided
  • 1/3 cup white sugar
  • 1/4 teaspoon salt
  • 1 egg, beaten
  • 2/3 cup raisins
  • 1 tablespoon butter
  • 1/2 teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • Whipped cream

Belle’s Rice Pudding

3/4 cup uncooked jasmine rice
2 cups milk
1/3 cup white sugar
1/4 teaspoon salt
1 egg, beaten
2/3 cup raisins
1 tablespoon butter
1/2 teaspoon vanilla extract
½ teaspoon cinnamon
Whipped cream
In a medium saucepan, bring milk to a soft boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
Add sugar and salt. Cook over medium heat until thick and creamy, 15 to 20 minutes. Stir in beaten egg, butter, raisins, vanilla and cinnamon. Cook 2 minutes more, stirring constantly. Remove from heat, and serve warm with whipped cream.
