My husband loves his cookies, but he also loves his brownies, so I came up with a recipe that combines the two into a fudgy and delicious treat that is super simple to make and uses only four ingredients. My salted caramel brownie cookies were created when I saw a package of salted caramel chips in the baking aisle at the grocery store. It seems there is salted caramel everything these days, and why not? It is delicious! I bought a bag of these chips knowing there had to be something I could use them in. I’ve been making cake mix cookies for years, but decided to use butter instead of oil and reduce the eggs to one to give the dough a chewier texture. The result was a cookies that tastes like a brownie and a very happy hubby.
Belle’s Salted Caramel Brownie Cookies
1 box German Chocolate Cake mix
1 egg
½ cup butter
1 cup salted caramel chips
Mix all the ingredients together and place by a rounded teaspoonful or cookie scoop on an ungreased cookie sheet. Flatten each ball slightly with your fingers. Bake at 350 degrees for 10 minutes. Cool on racks.
