Alfredo may not be on your list of diet foods but if you are trying the low carb diet, this recipe will be one for you. And if you just love the creamy rich flavors of Alfredo, then this recipe is for you as well. I love this hearty and satisfying dish because it is a one pan meal that is loaded with veggies but is also full of flavor. If you aren’t worried about cutting carbs, you can substitute the spaghetti squash for plain spaghetti pasta and make it a traditional Italian Alfredo. Either way, this creamy and delicious dish is easy to make and will have the entire family wanting more.
Belle’s Shrimp Alfredo with Spaghetti Squash
6 tablespoons butter, divided
4 teaspoons minced garlic
1 pound shrimp peeled and deveined, tails removed
½ cup water
8 ounces cream cheese
1/2 cup shredded Parmesan cheese
1 teaspoon sea salt
2 teaspoons oregano
4 cups broccoli florets, lightly steamed
1 medium spaghetti squash
Cut the spaghetti squash in half lengthwise and place the halves cut side down on a plate. Microwave for about 12 minutes or until flesh is soft and can be scooped out in strands. Set it aside. Heat 2 tablespoons of the butter in a skillet over medium heat. Add garlic and cook for about one minute. Add shrimp and cook for 2-3 minutes on each side, just until pink. Don’t overcook the shrimp or they will be tough. Remove shrimp to a bowl and keep warm. To the pan, add the remaining butter, water, cream cheese, parmesan cheese, salt and oregano and stir until well combined. Remove from heat once butter and cream cheese have melted. Stir in shrimp and broccoli. Add in spaghetti squash. Heat through and serve immediately.
