Breakfast is supposed to be the most important meal of the day, and for me it is probably my favorite. I enjoy breakfast so much, I often have it for dinner. Eggs, pancakes, waffles, bacon, you name it and I’m a fan. One of my favorite breakfast dishes is my skinny pancakes. They are very similar to crepes, but a bit fluffier. They only have two ingredients and if you are on a low carb or gluten free diet, these are perfect. No flour needed, and yet these cakes are great with syrup, jam, or stuffed with fruit and topped with whipped cream. I’ve even made these and filled them with sour cream and savory spices. They are versatile and delicious however or whenever you serve them.
Belle’s Skinny Pancakes
4 ounces cream cheese, room temperature
4 eggs
In a blender, place ingredients and blend well until fluffy. Pour batter by ¼ cup scoops onto buttered hot skillet. Flip when the cakes are slightly dry on the edges and are covered in bubbles. Serve with powdered sugar, syrup, or jam.
