I had a wonderful crop of tomatoes this year, the problem is most of them were still green the end of October. Do you still have tomatoes languishing on the vine? Don’t leave those green beauties out to freeze. Instead, bring them in and make a hot and tangy relish! My spicy green tomato relish is so easy to make and it goes great with hamburgers, hot dogs, and just about anything else you want to give a little extra kick. You can store this relish in the fridge for several weeks or can it for use all year long.
Belle’s Spicy Green Tomato Relish
2 pounds green tomatoes (about 4-5 medium tomatoes)
1 medium yellow onion
1 red bell pepper, seeds and ribs removed
1/2 cup sugar
1 cup white vinegar
1-2 teaspoon crushed red pepper
1 teaspoon salt
½ teaspoon ground mustard
Blend the tomatoes, onion, and pepper in a food processor until finely diced. Place this into a large bowl. Add the other ingredients and mix well. Store in an airtight container in the fridge for up to three weeks, or place in jars with canning lids and water bath for 10 minutes.
