Special occasions deserve special dishes and my spinach artichoke dip is just the thing for the start of a special meal. This dip is tangy and cheesy and yet so simple to make. You can mix it up in advance and then keep it in the fridge until your guests arrive. Then simply pop it in the oven for 20 minutes and you have a warm and delicious beginning to the evening. Serve with chips, crusty bread, or veggies. You may want to double the recipe because it always seems to disappear in just minutes.
Belle’s Spinach Artichoke Dip
1 (9 ounce) bag baby spinach
1 (14 ounce) can quartered artichoke hearts
1 cup mayonnaise
1 cup shredded parmesan cheese
Chop the spinach and place in a bowl. Drain the can of artichoke hearts and chop them. Add to the spinach. In a separate bowl, mix together the mayonnaise and cheese. Add the spinach and artichokes and mix well. Place in a small oven safe dish that has been lightly greased and bake at 350 degrees for 20 minutes.
