• 2 hard-boiled eggs, chopped

  • 1/2 teaspoon Dijon Mustard
  • 1 dash Salt

There has never been a question about my love of bacon and I am pretty sure most of you agree with me. The smoky, savory flavor adds so much to so many dishes. My spinach salad with warm bacon dressing is a favorite. I serve it as a side salad with steak or other simple main dishes, or I often make this salad for lunch or a light dinner on its own. The smoky bacon combined with the tangy vinegar and mustard, make the dressing flavorful and the eggs and spinach are filling and so good for you. This salad is easy to prepare and is always a hit… after all it is bacon!
Belle’s Spinach Salad with Warm Bacon Dressing
2 hard-boiled eggs, chopped
4 slices bacon, chopped
1 small onion, thinly sliced
1 cup mushrooms, sliced
9 ounce bag baby spinach
3 Tablespoons Red Wine Vinegar
2 teaspoons Sugar
1/2 teaspoon Dijon Mustard
1 dash Salt
In a large fry pan, cook the chopped bacon until almost crisp. Do not drain. In the bacon grease, add the onions and mushrooms just until tender and bacon is crisp. In a bowl, combine the vinegar, sugar, mustard and salt. Add to the pan and stir to coat. Place the spinach and eggs in a large bowl. Add the warm bacon dressing and toss to coat. Serve warm.
