Happy New Year! If you are looking for a great dish to help with your resolution to eat healthy, this is it! My split pea and ham soup is so hearty and filling, I find it hard to call it soup. It is thick and savory with a wonderful smoky flavor. This dish is packed full of fiber and protein and yet it is under 300 calories per serving. Of course, it is simple to make. You simply place all the ingredients in your slow cooker in the morning and when you return home, your house will greet you with the delicious aroma of a hearty home cooked meal. It is the perfect way to ring in a healthy 2017.
Belle’s Split Pea and Ham Soup
1 package (16 ounces) dried green split peas, rinsed
2 cups cubed fully cooked ham
1 cup chopped onion
1 ½ cup diced carrots
2 teaspoons minced garlic
1/2 teaspoon crushed rosemary
1/2 teaspoon ground thyme
4 cups chicken broth
2 cups water
Combine all ingredients in a slow cooker. Cover and cook on low for 8 hours or until peas are tender.
