It is the time of year, when my rhubarb plant goes crazy. This large and leafy weed grows long, red stalks of tart fruit that are prolific in this area and at this time of year. And when you have a rhubarb plant, you need a perfect recipe for strawberry rhubarb pie. So, here is my tried and true favorite! I love this basic and traditional summer treat. This sweet and tart pie is full of juicy fruit and has a tasty combination of warm spices. It’s easy to put together and I usually cheat and use a refrigerated pie dough that you just roll out and put in the pan. You can get creative and make a lattice top crust or just top it and slice some pretty shapes for the vents. Either way, the aroma and flavor will have everyone welcoming summer!
Belle’s Strawberry Rhubarb Pie
1 double crust pastry shell
4 cups chopped rhubarb
4 cups sliced fresh strawberries
1 ½ cups sugar
½ cup flour
1 teaspoon cinnamon
½ teaspoon nutmeg
½ teaspoon allspice
1 egg white
1 teaspoon sugar
½ teaspoon cinnamon
Line a 9 inch pie plate with one of the unbaked pastry shells. In a large bowl, place the rhubarb and strawberries. In another bowl, mix together the sugar, flour, and spices until well blended. Pour over the fruit and toss to coat. Let sit for 15 minutes. Pour the fruit into the pie plate and then top with the other crust and crimp edges to seal. Vent the top crust by slicing it in several places to let the steam escape. Whisk the egg white until frothy and brush the top crust, and then sprinkle with the sugar and cinnamon. Bake on the lowest rack of the oven at 450 degrees for 15 minutes. Then turn the oven down to 350 degrees, cover the pie with foil and bake another 45 minutes. Let the pie cool completely before serving.
