• 2 (5 ounce) cans tuna in water, drained
  • 2 eggs
  • ½ cup celery, diced
  • ¼ cup of green onion, thinly sliced
  • 1 tablespoon lemon juice
  • 2 teaspoons of Dijon or brown mustard
  • 2 teaspoons Old Bay seasoning
  • ½ teaspoon pepper
  • ½ cup of panko bread crumbs
  • 2 tablespoons oil

So often the big question of the day comes down to “what’s for dinner?” My tuna patties are the perfect answer. They are delicious and super easy to throw together. I usually have all the ingredients on hand, and when I serve these golden brown, tasty patties, they are always a hit. The seasoning and crunchy celery are a great combination, plus they are loaded with protein. Add a salad or roasted vegetable and you have a complete and satisfying meal. So, instead of your family asking “what’s for dinner”, they will soon be asking for this delicious dish.
Belle’s Tuna Patties
2 (5 ounce) cans tuna in water, drained
2 eggs
½ cup celery, diced
¼ cup of green onion, thinly sliced
1 tablespoon lemon juice
2 teaspoons of Dijon or brown mustard
2 teaspoons Old Bay seasoning
½ teaspoon pepper
½ cup of panko bread crumbs
2 tablespoons oil
Mix all ingredients (except oil) in a large bowl. Heat oil in a medium frypan. Scoop mixture by ¼ cup size scoops and place in hot oil. Press down with spatula to flatten each patty. Cook until golden brown on each side. Drain on paper towels.
