I hate to admit it, but I have no will power when it comes to certain foods. I avoid ever being around them because I know I can’t stop once I’ve started and they are usually foods high in calories and fat. One of those little devil foods is tater tots. I’m addicted. With that in mind, I set out to find a way to have the crispy outside, soft inside, potato flavor, but without all the guilt. My veggie tots really fit the bill. They use cauliflower instead of the potato and with a mixer of cheese and eggs, these little tots are full of flavor and because they are baked instead of deep fried, they have far less grease. If you are looking for a great substitution and want less starch and fewer calories, this dish is perfect.
Belle’s Veggie Tots
1 egg
1 egg white
¾ cup shredded mozzarella cheese
1 teaspoon salt
½ teaspoon pepper
1 head Cauliflower
In a food processor, blend the cauliflower until it is the texture of cooked rice. In a fry pan, cook the cauliflower in about small amount of oil until it is lightly browned, about 5 minutes. Place in a bowl and when cool, use a paper towel and press out all the moisture you can from the “rice”. Add the egg, egg white, cheese, salt, and pepper. Combine well. Form into 1 inch tots and place on a baking sheet coated with cooking spray. Give the tots a spray of cooking spray on top. Bake in a 425 degree oven for 10 minutes and then flip over and cook for an additional 7-10 minutes until crispy.
