So, you’re starting the New Year and looking to add some tasty, high protein, low carb dishes to your diet, but you’re also wanting more than just plain meat and veggies. Here’s a delicious and easy quiche that is satisfying and also something the entire family will enjoy.

The eggs and cheese add lots of protein and flavor, and because this quiche has no crust, you don’t have the added calories and carbs that pastry usually brings to traditional quiche recipes.  And don’t forget that zucchini is great when trying to shed pounds.  It is almost all water, so it makes you feel full, but adds almost no calories at all.  This dish is hearty, full of flavor, and healthy. It’s a great way to ring in the New Year!

Belle’s Zucchini Pizza Quiche

2 eggs

¼ cup flour

1 teaspoon oil

½ teaspoon basil

¼ teaspoon oregano

2 cups grated zucchini

1 cup shredded mozzarella cheese

1 cup grated parmesan cheese

¼ cup pepperoni slices

Whisk together the eggs, flour, oil and spices until smooth. Add the zucchini, ½ cup of the mozzarella cheese, and ½ cup of the parmesan cheese and blend well. Place this mixture into a greased 10 inch pie plate. Bake at 350 degrees for 30 minutes. Remove from the oven and sprinkle with the remaining cheese and lay the slices of pepperoni evenly over the top. Bake another 10 minutes until the cheese is melted.
